An Eggplant Experience

I only have one eggplant plant and it has been a long wait to see the first fruit set, but it looks like they are finally here. Two fruits appeared out of no where, both are about the size of a baseball. This is the standard black beauty variety of eggplant and I am not sure how much longer before they are ready to harvest. I can't wait, and I already have a recipe for eggplant parmesan that I want to try.  The plant is loaded with flowers and I hope I get some decent pollination and more fruit.

Hooray for you! My eggplant is at least growing something ,I've eaten one small one I have two more small ones that I'm wondering if we picked to early. They are about the same size as yours.. I'm going to give the others more time ..

How did you cook your eggplant?

Congrats! The hardest thing about eggplants for me has been determining when they are ready to be picked. I have never seen them grown before and have been guessing, but I am getting better at it. :)

Cristy, I am in the same boat. I have never grown them before either so I am a little hesitant about when to harvest them.

I have read about applying pressure with with thumb and if an indentation remains it is ready. If the indentation springs back it still needs more time to mature. We will see I guess.

Just tried the thumb test, and indentation sprang right back, so it would appear it is not ready.
